I love going out for Thai food and have picked up a few Thai cookbooks, but I never end up making the dishes at home. The recipes can be intimidating and I don’t have a wok. And while I wait for Santa to bring me the Pok Pok cookbook, I decided to experiment with Thai Basil Chicken on my own. I started with a simple recipe from Food and Wine and made it a little bit more family friendly – cut the hot peppers but added sriracha for extra heat and I added veggies to make it a one pot dinner.
